The middle of a bench is the seat nobody books
The continuous banquette along a wall takes six or eight people in theory. In practice the two ends go first, then the pair in the middle that already knows each other, and the seats left are the ones flanked by strangers with no back to lean away from. Dividers every two seats remove those seats from the problem by giving every pair a wall of its own.
It costs less than it sounds. The run, the upholstery and the seat are unchanged; the dividers are oak panels keyed into the frame at fixed positions, and the whole wall starts behaving like four tables instead of one bench.
Two back heights in one run
The back at the wall is 900 mm, which is low enough to see over from the room and keeps the wall from reading as a fence. The dividers run to 1150 mm, so the pair sitting in a bay are screened from the pair next to them without the wall behind them being raised.
Two heights in one run also gives the booth a rhythm. Walls of identical bays at one height look institutional; alternating low back and tall divider makes the eye read individual tables.
Oak above the upholstery, and why
The back frame is left exposed above the upholstered panel. It gives the run a solid line at shoulder height and it takes the wear that a fully upholstered back gets at the top edge, where hands and coats land. The top edge on a long run is the first thing to go, fabric or leather.
The exposed frame also lets the dividers meet the back cleanly, because both are oak and the joint is timber to timber rather than upholstery to timber.
