Solid wood chair, microfibre, tall back
At 840 mm the back sits above the table line, so the chair reads as seating rather than as a frame with a seat in it.

What the extra 60 mm of back does
Table-height chairs are usually built to 780 or 800 mm, which puts the back just below the table edge when a guest leans forward. Raising it to 840 mm keeps the back visible above the table and gives the seated guest something to lean on at the shoulder rather than the waist.
That matters most where people sit for a long time, which in a pub means the lounge side rather than the dining side. On a fast-turn floor the extra height buys nothing and adds a little weight.
Microfibre at shoulder height
Back pads at 840 mm take continuous contact from clothing, and clothing is abrasive in a way hands are not: a jacket's seam edge rubs the same line all evening. Microfibre's nap hides that scuffing; a flat woven fabric shows a shine at the contact line within a year.
Microfibre also has enough grip that the pad does not slide against a guest's back, which is why the cover is stapled tight rather than left with any slack.
