Fabric seat timber stool
Soft fabric on a bar seat is a decision about sound as much as comfort: a room full of upholstered stools is measurably quieter than one full of hard shells.

Quiet rooms
Hard seats reflect; padded ones absorb. On a low ceiling with a hard floor, twenty upholstered stools change the noise level more than any acoustic panel, and they change it exactly where guests are sitting.
That is the argument for fabric in a lounge, and the argument against it at a counter where drinks are spilled.
Cover on a timber frame
Upholstery over timber needs a panel to staple to, and a panel is what makes a seat re-coverable. Ask for the seat as a separate panel rather than foam glued to the frame: the second is cheaper by an hour of labour and impossible to repair.
