Folding timber stool with cushioned seat
Folding bar stools are a compromise on rigidity and a gain on floor area, and only one kind of venue can make that trade pay: the one that empties the room twice a week.

What folding costs
Folding frames need a hinge, and a hinge is a moving joint in a piece of furniture that takes a sideways load. On a stool, that means the frame has to be braced in the open position and the hinge has to lock, not just fold.
The practical question is the fold-flat depth: a stool that folds to 120 mm stores twenty in a metre; one that folds to 300 mm stores eight and has not solved the problem.
When it is worth it
Rooms that are cleared for a band or a dance floor two nights a week needs the seating gone, not moved. Folding stools make that a five-minute job for one person. On a bar that never clears, a fixed frame is stiffer for the same money and should be bought instead.
