Where a high back belongs
Above the counter line, a back becomes part of the room's silhouette. Along a wall or against a window that is an asset; in the middle of a floor it blocks the view of the bar from the door, which is the one sight line a venue cannot afford to lose.
The safe rule is perimeter only, and never two rows deep.
Cushion rather than upholstery
Loose cushions can be replaced in a season; a built-in pad needs the frame back at the workshop. On a stool whose frame is the expensive part, that is the difference between a repair and a purchase.
