Nordic timber stool, fabric cushion
Walnut at 950 mm with a fabric cushion is the combination that has stayed in bars for sixty years, because it is the cheapest way to make a room feel furnished rather than fitted out.

Why the cushion is separate
Cushions that sit on a timber seat, rather than being built into it, can be re-covered or replaced without touching the frame. On a stool where the frame is the expensive part, that is the whole maintenance plan: two cushions over the life of one frame.
It also lets the seat be the soft element and the frame be the hard one, which is what a bar needs. Padded frames flex; a solid frame with a pad on it does not.
Walnut finish, not walnut
Most stools sold as walnut are a stained hardwood, which is fine and behaves differently: the colour sits on the surface and a deep knock shows light timber underneath. Solid walnut goes all the way through and can be sanded back, at roughly twice the price.
