Brushed rather than polished, and why that matters at a bar

Polished stainless shows every fingerprint, every glass ring and every scratch, and in a bar it looks dirty within an hour of opening. Brushed finish at 240 grit scatters that damage into a surface that reads as uniform even when it is not. It is also repairable: a scuff can be re-brushed along the grain in one direction with a hand pad, which cannot be done on a mirror polish.

The grain direction is set before assembly, so all the parts on one table run the same way. Mixed directions catch the light differently and the piece looks mismatched.

Steel on top is loud, and the substrate fixes that

Steel sheet at 1.2 mm over air rings when a glass goes down. Over a timber or composite substrate it does not, because the substrate damps the panel. The top here is a steel skin bonded to a substrate, edged and folded, so the surface reads as steel and behaves like a solid top.

Where this set earns its cost

It costs more than powder-coated steel and much more than timber. It earns that back in rooms where the cleaning chemical is the aggressive part: a floor that gets a chlorine-based wash nightly will strip a powder coat within two years and does nothing to stainless. If the cleaning regime is mild, the same design in powder-coated steel is the cheaper answer and we will say so.
