Height adjustable table, 600 mm top
One table that covers 700 to 910 mm sounds like a compromise and is not: the two heights are the two the room actually uses, and the adjustment is what lets a zone change use between service and late trade.

Two heights, one stock line
Rooms that are seated at six and standing at ten do not need two sets of tables. The 700 mm setting takes a chair; the 910 mm setting takes a 650 mm stool and puts the top where a guest can lean. The same piece does both, and the change takes one person and no tools.
Stock is where the saving shows. One line covering both heights means half the spare units in the store room, and a damaged table can be moved between zones instead of written off.
What a pedestal gives up, and what it buys
Four legs at 910 mm are four things to trip over at exactly the height where people are moving with full hands. Single pedestals clear the whole footprint, cost nothing in stability once the base is wide enough, and let chairs pull in from any side.
The trade is weight at the centre, which matters on a floor that is not level: a pedestal table needs a foot that can be adjusted, and this one has it.
The top in a wet room
Marble effect is a laminate face, not stone. That is an advantage behind a bar: it does not stain, does not ring under a hot cup, and a chipped corner can be replaced without replacing the table. What it does not do is take heat from a pan or a cigarette, so it belongs in the front of house rather than the back.
