Removable covers, for a reason
Fixed upholstery on a timber seat means the whole chair goes out of service when the cover fails. On a floor of forty chairs, that is not a repair problem, it is an inventory problem: every failure removes a seat from the room.
Lift-off cushions can be swapped in the store cupboard. The frame stays, the cover goes back to the workbench, and the seat count on the floor never drops.
Square footprint at 450 mm
Square chairs pack efficiently against a banquette and turn without catching the next chair, which is why 450 mm square is the default for a run against a wall. The 800 mm back height clears a 750 mm table surface without hiding the guest behind it.
Legs are solid timber with the rear pair raked slightly outward, so a chair pushed back on two legs does not tip as easily as a straight-legged frame with the same footprint.
