Timber back stool, leather or fabric
Timber back with a covered seat splits the stool at the right place: the part that takes the abuse is replaceable, and the part that carries the shape is not.

The split that makes sense
Timber backs keep their shape for the life of the stool and can be sanded if it is marked. Wear, spills and compression all land on the cover, which is the part a venue expects to renew. Building them separately is cheaper over ten years than any all-upholstered option.
Cover choices here range from dark leather to plain fabric, which is the range a bar actually needs.
780 mm and the tall counter
At 780 mm the stool is for a bar top rather than a counter. The seat is high enough that the guest stands to get on and perches rather than sits, which changes the back angle the frame should be built at.
