Upholstered timber stool, high back
High back plus full upholstery is the point at which a bar stool becomes a chair on legs, and that is the right answer for a lounge counter and the wrong one for a walk-up bar.

Where the extra back pays
Guests who stay for three hours need a back that reaches their shoulders and a cover that does not transmit every tilt of the frame. That is a different specification from a stool designed for a twenty-minute drink, and the two should not be mixed along one counter.
The structural cost is real: a tall upholstered back adds mass above the seat, so the base has to be wider than the frame would otherwise need.
Made to size, made to cover
On a bespoke build the cover can be matched to a banquette in the same room, which is the reason most of these are ordered per project rather than from stock.
