Bentwood frames and removable pads
Steam-bent beech takes a curve that welded steel cannot follow cheaply, and the curved back rail is what makes a chair comfortable without any padding in the back. The pad on the seat is a separate piece held by two ties or press studs, so a stained pad is swapped in seconds rather than the chair being taken out of service.
That single detail is why a coloured scheme is practical: the pads are consumables, the frames are not.
Green as a room colour
Deep green reads as a considered choice under warm light and as near-black under cool light, which makes it work in a room that switches mood between afternoon and late evening. Paired with a black iron frame and a steel table top, the green does all the colour work and the rest stays neutral, so a re-scheme means new pads and new booth covers rather than new furniture.
Iron frames on a floor that changes
Iron is heavier and stiffer than steel tube of the same section, so tables do not walk when a crowd leans on them and chairs do not rack out of square. The price is weight: a 700 mm table with an iron frame is a two-handed lift, which is why every piece ships flat and assembles with bolts.
