Four hundred millimetres is enough
Counter guests need a glass, an elbow and a plate, and 400 mm of depth covers all three if the guest is facing the bar. Push to 700 mm and the extra depth becomes working space for staff, which is a different requirement. In a narrow room, keeping the guest side at 400 mm leaves the circulation route at a usable width instead of forcing guests to turn sideways to let someone past.
The overhang still has to be 250 mm for knees, which means the front panel is effectively a 150 mm band under a 400 mm top. That is the proportion that makes a narrow counter look right.
Legs at 1800 mm centres
Long counters fail visually in the middle, where the span between supports lets the top dip by a few millimetres. Nobody can say what is wrong, but the run looks tired. Steel legs at 1800 mm centres hold the top straight without a visible intermediate support, and the legs are set back so they do not interrupt the foot space.
Backless stools on a narrow run
Backless stools let the counter be used standing as well as sitting, and they tuck under when the room is quiet. On a 400 mm counter a backed stool would put the guest's shoulders past the front edge, and the run would look like a row of chairs rather than a bar.
